Whale’s skin. That’s the name of this extraordinary glaze, that looks iridescent, metallic but with the flexible appearance of leather, glossy and scaly, and reflects lights as if it would just come out from the sea. The name was taken from a technique of Japanese ceramics from Karatsu – Kawakujira-, since the final look of the piece has a certain Japanese appearance.
It’s an haute cuisine highly appreciated plate, because it’s deep and makes the gastronomic creation stand out without competing with it.
